Our roots are Scottish so Scottish Highland Coo's is our breed. Highlands are rustic cattle. They originated in the Scottish Highlands and the Western Islands of Scotland. It is a hardy breed, able to withstand the intemperate conditions in the region, and the Temperature swings of East Texas.
